Fish recipes
As I find recipes I like, I will post them here and invite others to do the same.
First recipe is "Tuna for Tuna Haters". My wife says she doesn't like fresh tuna (although she will eat canned tuna, go figure) so I came up with this. She loved it. My daughter stopped over and had some and pronounced it "amazing". Just got back from a 2.5 day trip this week and have plenty of yellowfin tuna now.
Thaw and rinse tuna, dry with towel (paper or cloth). Tuna should be cold or even partially frozen so it can still be a bit rare in the center after searing on the outside. Recipe is for approximately 1 lb. of tuna.
Cut fillet lengthwise (or crosswise depending on shape of the fish chunk) so it is 2” thick or less
Remove the dark streaks if present (very fishy taste)
Soak fish in milk, 15 minutes per side. This removes any fishy smell from the surface
Drain
In a pan, put 2 tablespoons of butter plus same amount of olive oil
Add 2 cubes of garlic cubes from Trader Joes: https://www.bonappetit.com/story/trader ... ger-garlic
Turn on heat (low), melt butter and mix together
Put fish in pan, season with lots of lemon pepper. Add seasoned salt if desired (the lemon pepper I used had enough salt already).
Cook to desired level of doneness (pink to red inside is my favorite), medium heat is adequate. Sear both sides (3 sides if triangular cross section). Fish will continue to cook some after removing from the pan. Get lemon pepper on all sides.
Serve with miso BBQ or teriyaki sauce if desired. We had farro as a side dish. Garlic, lemon pepper and butter: how can you go wrong with that?

Tuna again tonight. Used about 1 lb of fish in the recipe below.
Rinse fillets. Cut into .75" thick slabs. Soak in 50/50 vinegar and water solution for 20 minutes each side. The vinegar removes any fishy smell from the surface and leaves a tangy taste. Remove and towel dry.
Mix 2 tablespoons of mayo and 2 tablespoons of steak seasoning, brush thick on both sides. Broil until the desired amount of doneness. I did 8 minutes in a hot air fryer at 370F.
Recipe also works well with lemon pepper, blackened fish seasoning or about any other meat seasoning you like in lieu of steak seasoning.
Had quinoa as a side.

A great recipe ive modified & tweeked for the better over the years, I wouldnt use tuna in it but its great....

Looks good. FYI, I have been known to add wasabi and soy sauce to leftover ceviche on day 2, makes it into a different but still very good dish. A Mexican panga fleet owner taught that recipe to me on a trip in Mexico except he didn't wait until day 2. He called it Mexican sashimi. Or...
no cooking...Salt (heavily) the filet, refrigerate for 30 min. Rinse off salt and slice edges off and retain for Maki (roll) and Poke (shown in the bowl), leaving the beautiful even slabs for sashimi. I could provide more details of the assembly and ingredients, but I am still an amateur.

Been cooking up the halibut caught last weekend. Just cooking in a pan with a little oil, putting it on a plate with soy sauce, tartar sauce or lemon juice on each forkful. Or tuna quesadillas.
But last night I was stuffed and still had a cooked piece. Mashed it up with a fork, added mayo, pepper, and just a squirt of mustard. Made a sammich with it on sourdough bread this morning. Seems like borderline heresy to waste good hali flavor, but the result tasted waaay better than a tuna sandwich.

It was teriyaki tuna tonight. Soak tuna in water for a few minutes, pat dry and put in a 1 gallon Ziploc bag with 1/2 cup teriyaki sauce and juice from 1/2 lemon, expel all the air and seal. Marinate for about 2 hours in refrigerator. Remove from bag and sprinkle toasted sesame seeds on surfaces, press in and cook in hot air fryer or grill until cooked on the outside but pink or red on the inside according to preference. 375F for 12 minutes worked for 2" thick fillets. Serve with additional sauce for dipping.

Quick and easy recipe for hot air fryer:
1 lb tuna or other full flavored fish
Mix together and brush on fish, teaspoons are heaping size:
1 tsp ground cumin
2 tsp tajin
1 tsp seasoned salt
1 tsp powdered ginger
4 tsp mayonnaise
Cook at 350F for 8 minutes (for about 1.5" thick pieces) or until fish is desired doneness. I prefer pink inside. Will certainly work for broiling or grilling too. Yum.
Side note: BBQ sauce is good to dab on cooked tuna too. I have used Sweet Baby Ray's brand but other brands would be good too.

Forgot to add: 1 tsp of hoisin garlic teriyaki sauce to add a bit of sweetness. But BBQ sauce would work too.

I discovered amchur powder which can be used to add some acidity but without making the blend watery like lime or lemon juice.

Where are you buying your tuna steaks? If you're getting them from major food chains like Vons, Albertson, Walmart, Sprouts etc you might not be getting real fresh tuna.
I am guilty of eating the sushi rolls they sell at Sprouts for $5 on Wednesdays but I will never buy a steak from a food chain, to be fair I never buy fish fillets anywhere unless I don't catch it myself..

I have plenty of frozen tuna from multiday ocean trips in my freezer. FYI, smoked fish is also exposed to lots of carbon monoxide. I have not seen any evidence that CO is detrimental to fish fillets other than masking spoilage.
A fishy smell is due to trimethylamine, a decomposition product from bacterial or enzymes. It occurs in saltwater fish, particularly darker fleshed varieties like mackerel, tuna, bonito, etcetera. Soaking in milk or something acidic partially gets rid of it.

This was great on top of seasoned and fried spotfin and corbina. "Aromatics are key for some recipes for this kind of fish.
My son followed the recipe and added 1/2 teaspoon of paprika. Leftover salsa is excellent on a variety of dishes, such as eggs with beans.
Suggestion: For people who are put off by the skin and bones, filets will be a better option.

Favorite recipe for raw , chunk bluefin or other tuna, red onion diced, cucumber chunks, tomato -remove seeds, cilantro chopped, mix in Hot, spicy sesame oil, soy sauce.
Dip with crackers.
