Elote ( Mexican street corn ) Recipe

Fixed up some of this recipe with grilled chicken tonight for dinner . Have to say the recipe is a keeper . Got to be the best ear of corn I have had . Been missing out as I see it .

My favorite is corn that has been smoked in a smoker and then grilled. I loaned my son (33 years old) my Luhr Jenson fish smoker and he 1st cold smokes the corn in that and then grills it. Or something like that, I would have to get the details. I think he removes the husk and silk before smoking. Had yesterday on Father's Day.
Next favorite is corn grilled over a campfire on a fishing trip. Pull the husk back, remove silk, put the husk back and grill over the fire.
