Recently started tryng to use a FF. Once the sun comes up my screen becomes a mirror. I can hardly see anything! Suggestions?

Which fish finder do you have?
I have the Humminbird Fishinbuddy (no longer made) and it doesn't seem to have that problem. But I always have polarized sunglasses on when the sun is out, that might make a difference (although it seems to make it harder to read my phone).
An opaque shroud over it could work, use something like plastic from an old bleach or laundry soap jug and some zip ties.
There are antireflective (antiglare) coatings, that might help.
